Ingredients

  • 2 slices bread
  • 2 slices ham
  • 40g cheddar cheese, grated
  • 1 tsp butter, for spreading
  • 1 x 400g tin chopped tomatoes
  • 1/2 vegetable stock cube
  • 1/2 tsp dried basil

Method

  1. Tip the chopped tomatoes into a small saucepan with the stock cube and basil. Simmer over medium heat for 8 minutes, stirring occasionally.
  2. Meanwhile, butter one side of each slice of bread. Build the sandwich with ham and cheese on the unbuttered sides, then close it up.
  3. Fry the toastie in a dry pan over medium heat for 2-3 minutes on each side, pressing down gently, until golden and the cheese has melted.
  4. Blend or mash the soup until smooth (a stick blender is easiest), season to taste, and serve alongside the toastie.
