Ingredients
- 2 slices bread
- 2 slices ham
- 40g cheddar cheese, grated
- 1 tsp butter, for spreading
- 1 x 400g tin chopped tomatoes
- 1/2 vegetable stock cube
- 1/2 tsp dried basil
Method
- Tip the chopped tomatoes into a small saucepan with the stock cube and basil. Simmer over medium heat for 8 minutes, stirring occasionally.
- Meanwhile, butter one side of each slice of bread. Build the sandwich with ham and cheese on the unbuttered sides, then close it up.
- Fry the toastie in a dry pan over medium heat for 2-3 minutes on each side, pressing down gently, until golden and the cheese has melted.
- Blend or mash the soup until smooth (a stick blender is easiest), season to taste, and serve alongside the toastie.
