Cheesy Beans on Toast with a Fried Egg
Beans on toast, upgraded — melted cheddar and a fried egg turn a student staple into a proper meal.

Ingredients
- 2 slices thick bread
- 1/2 x 400g tin baked beans
- 30g cheddar cheese, grated
- 1 egg
- 1 tsp butter or oil, for frying
- Black pepper, to taste
Method
- Put the bread on to toast.
- Meanwhile, tip the beans into a small saucepan and heat gently over medium heat, stirring occasionally, for 3-4 minutes until piping hot.
- Heat the butter or oil in a small frying pan over medium heat. Crack in the egg and fry for 2-3 minutes until the white is set but the yolk is still soft (or longer, if you prefer it firm).
- Stir most of the cheese into the hot beans until melted.
- Spoon the cheesy beans over the toast, top with the fried egg, and scatter over the remaining cheese and a good grind of black pepper.
