Pork Chops with Apple & Cider Onions

Pan-fried pork chops finished in a sticky apple and onion sauce — one skillet, proper Sunday-dinner flavour.

Ingredients

  • 4 pork chops
  • 1 tbsp olive oil
  • 1 large onion, sliced
  • 2 apples, cored and sliced
  • 200ml cider or apple juice
  • 1 tbsp wholegrain mustard
  • 1 tsp dried sage
  • Salt and pepper, to taste

Method

  1. Season the pork chops. Heat the oil in a large skillet over medium-high heat and fry the chops for 3-4 minutes per side until browned. Remove and set aside.
  2. Add the onion to the same pan and cook for 5 minutes until softened.
  3. Add the apples and cook for 3 minutes, stirring occasionally.
  4. Pour in the cider, add the mustard and sage, and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Return the pork chops to the pan, cover, and simmer gently for 8-10 minutes, until the chops are cooked through.
  6. Season with salt and pepper before serving.
