Ingredients

  • 1 tbsp vegetable oil
  • 3 boneless, skinless chicken breasts, sliced
  • 1 onion, sliced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 2 cloves garlic, crushed
  • 2 tsp fajita seasoning
  • 300g long grain rice
  • 1 x 400g tin chopped tomatoes
  • 500ml chicken stock
  • 1 lime, juiced
  • Salt and pepper, to taste

Method

  1. Heat the oil in a large pot over medium-high heat. Brown the chicken for 5 minutes, then remove and set aside.
  2. Add the onion and peppers to the pot and cook for 5 minutes until softened.
  3. Stir in the garlic and fajita seasoning and cook for 1 minute.
  4. Add the rice and stir to coat, then pour in the chopped tomatoes and stock. Return the chicken to the pot.
  5. Bring to a simmer, cover, and cook on low heat for 18-20 minutes, until the rice is tender and the liquid is absorbed.
  6. Stir through the lime juice and season with salt and pepper before serving.
