One-Pot Toad in the Hole with Onion Gravy

Ingredients

  • 8 pork sausages
  • 2 tbsp vegetable oil
  • 140g plain flour
  • 4 eggs
  • 200ml milk
  • 1/2 tsp salt
  • 2 onions, sliced
  • 1 tbsp butter
  • 1 tsp plain flour (for gravy)
  • 300ml beef stock
  • 1 tsp Worcestershire sauce

Method

  1. Preheat the oven to 220°C (200°C fan)/Gas Mark 7. Pour the vegetable oil into a large roasting tin and put it in the oven to heat up.
  2. Whisk the flour, eggs, milk, and salt together in a jug to make a smooth batter. Leave to rest.
  3. Carefully add the sausages to the hot oil in the tin and roast for 10 minutes.
  4. Pour the batter around the sausages and return to the oven for 20-25 minutes, until well risen and golden — don't open the oven door for the first 15 minutes or the batter may sink.
  5. Meanwhile, melt the butter in a pan over low heat and cook the onions for 15 minutes, stirring occasionally, until soft and golden.
  6. Stir the flour into the onions and cook for 1 minute, then gradually add the stock and Worcestershire sauce, stirring until you have a smooth gravy. Simmer for 5 minutes.
  7. Serve the toad in the hole straight from the tin with the onion gravy poured over.
