Ingredients

  • 1 tbsp olive oil
  • 400g diced pork shoulder
  • 100g chorizo, sliced
  • 1 onion, diced
  • 1 red pepper, diced
  • 2 cloves garlic, crushed
  • 1 tsp smoked paprika
  • 300g long grain rice
  • 600ml chicken stock
  • Salt and pepper, to taste

Method

  1. Heat the oil in a large pot over medium-high heat. Brown the pork for 6-7 minutes, then remove and set aside.
  2. Add the chorizo, onion, and pepper to the pot and cook for 5 minutes, until the chorizo has released its oil and the onion has softened.
  3. Stir in the garlic and smoked paprika and cook for 1 minute.
  4. Add the rice and stir to coat, then pour in the stock and return the pork to the pot.
  5. Bring to a simmer, cover, and cook on low heat for 20 minutes, until the rice is tender and the pork is cooked through.
  6. Season with salt and pepper before serving.
