One-Pot Lamb Mince & Butter Bean Stew

Lamb mince simmered with butter beans, tomatoes, and rosemary — a cheaper way to get lamb's flavour into a midweek stew.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, crushed
  • 400g lamb mince
  • 1 tsp dried rosemary
  • 2 x 400g tins butter beans, drained
  • 1 x 400g tin chopped tomatoes
  • 200ml lamb or beef stock
  • Salt and pepper, to taste

Method

  1. Heat the oil in a large pot over medium heat. Add the onion and carrots and cook for 5 minutes until softened.
  2. Add the garlic and lamb mince, breaking it up with a spoon, and cook for 6-7 minutes until browned.
  3. Stir in the rosemary, butter beans, chopped tomatoes, and stock.
  4. Bring to a simmer and cook uncovered for 15 minutes, stirring occasionally, until thickened.
  5. Season with salt and pepper before serving.
