Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, crushed
- 400g lamb mince
- 1 tsp dried rosemary
- 2 x 400g tins butter beans, drained
- 1 x 400g tin chopped tomatoes
- 200ml lamb or beef stock
- Salt and pepper, to taste
Method
- Heat the oil in a large pot over medium heat. Add the onion and carrots and cook for 5 minutes until softened.
- Add the garlic and lamb mince, breaking it up with a spoon, and cook for 6-7 minutes until browned.
- Stir in the rosemary, butter beans, chopped tomatoes, and stock.
- Bring to a simmer and cook uncovered for 15 minutes, stirring occasionally, until thickened.
- Season with salt and pepper before serving.
