Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, crushed
- 500g potatoes, cut into chunks
- 1 x 400g tin chopped tomatoes
- 500ml fish or vegetable stock
- 1 tsp dried thyme
- 500g skinless white fish fillets (such as cod or pollock), cut into chunks
- Salt and pepper, to taste
- Handful fresh parsley, chopped (optional)
Method
- Heat the oil in a large pot over medium heat. Add the onion and cook for 5 minutes until softened.
- Add the garlic and potatoes and cook for 2 minutes, stirring.
- Pour in the chopped tomatoes, stock, and thyme. Bring to a simmer, then cover and cook for 15 minutes, until the potatoes are just tender.
- Season the fish and nestle it into the pot. Cover and simmer gently for 5-6 minutes, until the fish is cooked through and flakes easily.
- Season with salt and pepper and scatter with parsley before serving.
