Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 500g potatoes, cut into chunks
  • 1 x 400g tin chopped tomatoes
  • 500ml fish or vegetable stock
  • 1 tsp dried thyme
  • 500g skinless white fish fillets (such as cod or pollock), cut into chunks
  • Salt and pepper, to taste
  • Handful fresh parsley, chopped (optional)

Method

  1. Heat the oil in a large pot over medium heat. Add the onion and cook for 5 minutes until softened.
  2. Add the garlic and potatoes and cook for 2 minutes, stirring.
  3. Pour in the chopped tomatoes, stock, and thyme. Bring to a simmer, then cover and cook for 15 minutes, until the potatoes are just tender.
  4. Season the fish and nestle it into the pot. Cover and simmer gently for 5-6 minutes, until the fish is cooked through and flakes easily.
  5. Season with salt and pepper and scatter with parsley before serving.
