No-Bake Peanut Butter Oat Bars

A fridge-set oat bar with no oven required — cheap, filling, and ready to grab on the way out the door.

Ingredients

  • 250g rolled oats
  • 120g smooth peanut butter
  • 100g honey (or golden syrup)
  • 50g unsalted butter
  • 1 tsp vanilla extract
  • 30g dark chocolate, melted
  • Pinch of salt

Method

  1. Line a 20cm square tin with baking paper.
  2. Put the peanut butter, honey, and butter into a saucepan over low heat. Warm gently, stirring, until melted and combined — don't let it boil.
  3. Remove from the heat and stir in the vanilla extract and a pinch of salt.
  4. Add the oats and mix thoroughly until every oat is coated in the mixture.
  5. Tip the mixture into the lined tin and press down firmly and evenly with the back of a spoon.
  6. Drizzle the melted chocolate over the top, then chill in the fridge for at least 2 hours, until firm.
  7. Cut into 12 bars once set. Store in an airtight container in the fridge for up to a week.
