Ingredients

  • 8 boneless, skinless chicken thighs, cut into chunks
  • 1 tbsp vegetable oil
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar (or white wine vinegar)
  • 2 cloves garlic, crushed
  • 1 tsp grated fresh ginger
  • 300g long grain rice
  • 1 head broccoli, cut into florets
  • 1 tsp sesame seeds, to serve (optional)

Method

  1. Cook the rice according to the packet instructions. Steam or boil the broccoli florets for the last 4-5 minutes of the rice cooking time.
  2. Meanwhile, heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 6-8 minutes, stirring occasionally, until golden and cooked through.
  3. In a small bowl, mix together the soy sauce, honey, rice vinegar, garlic, and ginger.
  4. Pour the sauce over the chicken and cook for 2-3 minutes, stirring, until the chicken is coated and the sauce has thickened into a sticky glaze.
  5. Serve the chicken over the rice with the broccoli alongside, sprinkled with sesame seeds if using.
