Ingredients
- 1 tbsp vegetable oil
- 1 onion, diced
- 1 red pepper, diced
- 2 cloves garlic, crushed
- 1 tbsp chilli powder (adjust to taste)
- 1 tsp ground cumin
- 1 x 400g tin kidney beans, drained
- 1 x 400g tin black beans (or more kidney beans), drained
- 1 x 400g tin chopped tomatoes
- 150ml vegetable stock
- Salt and pepper, to taste
- Rice, to serve
Method
- Heat the oil in a large pot over medium heat. Add the onion and red pepper and cook for 5-6 minutes until softened.
- Stir in the garlic, chilli powder, and cumin and cook for 1 minute until fragrant.
- Add the beans, chopped tomatoes, and stock. Stir well and bring to a simmer.
- Cook uncovered for 15-18 minutes, stirring occasionally, until thickened.
- Season with salt and pepper, and serve with rice.
