Simple Vegetarian Bean Chilli

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 1 red pepper, diced
  • 2 cloves garlic, crushed
  • 1 tbsp chilli powder (adjust to taste)
  • 1 tsp ground cumin
  • 1 x 400g tin kidney beans, drained
  • 1 x 400g tin black beans (or more kidney beans), drained
  • 1 x 400g tin chopped tomatoes
  • 150ml vegetable stock
  • Salt and pepper, to taste
  • Rice, to serve

Method

  1. Heat the oil in a large pot over medium heat. Add the onion and red pepper and cook for 5-6 minutes until softened.
  2. Stir in the garlic, chilli powder, and cumin and cook for 1 minute until fragrant.
  3. Add the beans, chopped tomatoes, and stock. Stir well and bring to a simmer.
  4. Cook uncovered for 15-18 minutes, stirring occasionally, until thickened.
  5. Season with salt and pepper, and serve with rice.
