Ingredients
- 300g spaghetti or linguine
- 1 tbsp olive oil
- 1 onion, finely diced
- 3 cloves garlic, crushed
- 1 x 400g tin chopped tomatoes
- 2 x 120g tins sardines in tomato sauce or olive oil
- 1/2 tsp chilli flakes (optional)
- Salt and pepper, to taste
- Fresh parsley, to serve (optional)
Method
- Cook the pasta according to the packet instructions, then drain, reserving a splash of the cooking water.
- Meanwhile, heat the oil in a large pan over medium heat. Add the onion and cook for 5 minutes until soft.
- Add the garlic and chilli flakes (if using) and cook for 1 minute.
- Stir in the chopped tomatoes and simmer for 8-10 minutes until slightly thickened.
- Break the sardines into chunks and stir them into the sauce, along with their sauce or oil, and warm through for 2-3 minutes.
- Toss the drained pasta through the sauce, loosening with a splash of the reserved pasta water if needed.
- Season with salt and pepper, and scatter with parsley if using, before serving.
