Ingredients

  • 300g spaghetti or linguine
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 3 cloves garlic, crushed
  • 1 x 400g tin chopped tomatoes
  • 2 x 120g tins sardines in tomato sauce or olive oil
  • 1/2 tsp chilli flakes (optional)
  • Salt and pepper, to taste
  • Fresh parsley, to serve (optional)

Method

  1. Cook the pasta according to the packet instructions, then drain, reserving a splash of the cooking water.
  2. Meanwhile, heat the oil in a large pan over medium heat. Add the onion and cook for 5 minutes until soft.
  3. Add the garlic and chilli flakes (if using) and cook for 1 minute.
  4. Stir in the chopped tomatoes and simmer for 8-10 minutes until slightly thickened.
  5. Break the sardines into chunks and stir them into the sauce, along with their sauce or oil, and warm through for 2-3 minutes.
  6. Toss the drained pasta through the sauce, loosening with a splash of the reserved pasta water if needed.
  7. Season with salt and pepper, and scatter with parsley if using, before serving.
