Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 2 cloves garlic, crushed
  • 1 x 400g tin chopped tomatoes
  • 1 x 400g tin cannellini beans, drained
  • 900ml vegetable stock
  • 100g small pasta (ditalini or macaroni)
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Grated cheese, to serve (optional)

Method

  1. Heat the oil in a large pot over medium heat. Add the onion, carrots, and celery and cook for 7-8 minutes until softened.
  2. Add the garlic and cook for 1 minute.
  3. Stir in the chopped tomatoes, cannellini beans, stock, and oregano. Bring to a boil.
  4. Add the pasta and cook for 8-10 minutes, stirring occasionally, until the pasta is tender.
  5. Season with salt and pepper, and top with grated cheese if using, before serving.
