Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery sticks, diced
- 2 cloves garlic, crushed
- 1 x 400g tin chopped tomatoes
- 1 x 400g tin cannellini beans, drained
- 900ml vegetable stock
- 100g small pasta (ditalini or macaroni)
- 1 tsp dried oregano
- Salt and pepper, to taste
- Grated cheese, to serve (optional)
Method
- Heat the oil in a large pot over medium heat. Add the onion, carrots, and celery and cook for 7-8 minutes until softened.
- Add the garlic and cook for 1 minute.
- Stir in the chopped tomatoes, cannellini beans, stock, and oregano. Bring to a boil.
- Add the pasta and cook for 8-10 minutes, stirring occasionally, until the pasta is tender.
- Season with salt and pepper, and top with grated cheese if using, before serving.
