Pork Chops with Apple & Mustard Sauce

Ingredients
- 4 pork chops
- 1 tbsp olive oil
- 1 onion, thinly sliced
- 1 apple, cored and thinly sliced
- 150ml chicken stock
- 2 tbsp wholegrain mustard
- 100ml single cream
- Salt and pepper, to taste
- 500g potatoes, boiled, to serve
Method
- Put the potatoes on to boil for mash or to serve whole, according to preference.
- Season the pork chops with salt and pepper. Heat the oil in a large frying pan over medium-high heat and cook the chops for 4-5 minutes per side until golden and cooked through. Remove and set aside.
- Add the onion and apple to the same pan and cook for 4-5 minutes until softened.
- Pour in the stock and mustard, stirring to lift any browned bits from the pan. Simmer for 2 minutes.
- Stir in the cream and simmer for a further 2 minutes until slightly thickened.
- Return the chops to the pan to warm through, then serve with the potatoes.
