Pork Chops with Apple & Mustard Sauce

Pan-fried pork chops with a quick creamy mustard and apple sauce — simple, but feels like a proper Sunday dinner.

Ingredients

  • 4 pork chops
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 apple, cored and thinly sliced
  • 150ml chicken stock
  • 2 tbsp wholegrain mustard
  • 100ml single cream
  • Salt and pepper, to taste
  • 500g potatoes, boiled, to serve

Method

  1. Put the potatoes on to boil for mash or to serve whole, according to preference.
  2. Season the pork chops with salt and pepper. Heat the oil in a large frying pan over medium-high heat and cook the chops for 4-5 minutes per side until golden and cooked through. Remove and set aside.
  3. Add the onion and apple to the same pan and cook for 4-5 minutes until softened.
  4. Pour in the stock and mustard, stirring to lift any browned bits from the pan. Simmer for 2 minutes.
  5. Stir in the cream and simmer for a further 2 minutes until slightly thickened.
  6. Return the chops to the pan to warm through, then serve with the potatoes.
