Moroccan-Style Spiced Lamb Mince with Couscous

Warm spices, lamb mince, and apricots over fluffy couscous — a fast dinner that tastes like it took a lot longer.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 500g lamb mince
  • 50g dried apricots, chopped
  • 1 x 400g tin chopped tomatoes
  • 250g couscous
  • 300ml boiling vegetable stock
  • Handful fresh coriander or mint, chopped (optional)

Method

  1. Heat the oil in a large pan over medium heat. Add the onion and cook for 5 minutes until softened.
  2. Add the garlic, cumin, cinnamon, and paprika and cook for 1 minute until fragrant.
  3. Add the lamb mince and cook, breaking it up with a spoon, for 5-6 minutes until browned.
  4. Stir in the apricots and chopped tomatoes and simmer for 8-10 minutes until thickened.
  5. Meanwhile, put the couscous in a bowl, pour over the boiling stock, cover, and leave for 5 minutes. Fluff with a fork.
  6. Serve the lamb mince over the couscous, scattered with fresh herbs if using.
