Moroccan-Style Spiced Lamb Mince with Couscous

Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, crushed
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp paprika
- 500g lamb mince
- 50g dried apricots, chopped
- 1 x 400g tin chopped tomatoes
- 250g couscous
- 300ml boiling vegetable stock
- Handful fresh coriander or mint, chopped (optional)
Method
- Heat the oil in a large pan over medium heat. Add the onion and cook for 5 minutes until softened.
- Add the garlic, cumin, cinnamon, and paprika and cook for 1 minute until fragrant.
- Add the lamb mince and cook, breaking it up with a spoon, for 5-6 minutes until browned.
- Stir in the apricots and chopped tomatoes and simmer for 8-10 minutes until thickened.
- Meanwhile, put the couscous in a bowl, pour over the boiling stock, cover, and leave for 5 minutes. Fluff with a fork.
- Serve the lamb mince over the couscous, scattered with fresh herbs if using.
