Creamy Mushroom & Spinach Pasta
A store-cupboard creamy pasta that tastes far richer than the 20 minutes and handful of ingredients suggest.

Ingredients
- 300g pasta (penne or fusilli)
- 1 tbsp olive oil
- 1 onion, diced
- 250g mushrooms, sliced
- 2 cloves garlic, crushed
- 150g cream cheese
- 100ml milk
- 100g baby spinach (or 150g frozen spinach, defrosted)
- 30g parmesan, grated, plus extra to serve
- Salt and pepper, to taste
Method
- Cook the pasta in a large pot of salted boiling water according to the packet instructions. Drain, reserving a cup of the pasta water.
- Meanwhile, heat the oil in a large frying pan over medium heat. Add the onion and mushrooms and cook for 6-7 minutes until softened and golden.
- Add the garlic and cook for 1 minute, then stir in the cream cheese and milk. Cook, stirring, until the cream cheese has melted into a smooth sauce.
- Add the spinach and cook for 2 minutes until wilted.
- Stir in the parmesan and drained pasta, adding a splash of the reserved pasta water if the sauce needs loosening.
- Season with salt and pepper and serve with extra parmesan.
