Ingredients

  • 300g pasta (penne or fusilli)
  • 1 tbsp olive oil
  • 1 onion, diced
  • 250g mushrooms, sliced
  • 2 cloves garlic, crushed
  • 150g cream cheese
  • 100ml milk
  • 100g baby spinach (or 150g frozen spinach, defrosted)
  • 30g parmesan, grated, plus extra to serve
  • Salt and pepper, to taste

Method

  1. Cook the pasta in a large pot of salted boiling water according to the packet instructions. Drain, reserving a cup of the pasta water.
  2. Meanwhile, heat the oil in a large frying pan over medium heat. Add the onion and mushrooms and cook for 6-7 minutes until softened and golden.
  3. Add the garlic and cook for 1 minute, then stir in the cream cheese and milk. Cook, stirring, until the cream cheese has melted into a smooth sauce.
  4. Add the spinach and cook for 2 minutes until wilted.
  5. Stir in the parmesan and drained pasta, adding a splash of the reserved pasta water if the sauce needs loosening.
  6. Season with salt and pepper and serve with extra parmesan.
