Ingredients

  • 600g potatoes, peeled and diced small
  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 1 x 340g tin corned beef, diced
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste

Method

  1. Boil the potatoes in salted water for 8-10 minutes until just tender, then drain well.
  2. Heat the oil in a large frying pan over medium heat. Add the onion and cook for 5 minutes until soft.
  3. Add the potatoes to the pan and cook for 8-10 minutes, turning occasionally, until starting to crisp and turn golden.
  4. Add the corned beef and Worcestershire sauce, breaking the beef up gently, and cook for 5-6 minutes until heated through and crisping in places.
  5. Season with salt and pepper before serving.
