A warm, filling twist on a Caesar salad — pasta instead of endless croutons, and it's a proper dinner, not a side.

Ingredients
- 300g pasta (fusilli or penne)
- 2 chicken breasts
- 1 tbsp olive oil
- 2 baby gem lettuces, chopped
- 40g parmesan, grated, plus extra to serve
- 4 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 clove garlic, crushed
- Salt and pepper, to taste
Method
- Cook the pasta in a large pot of salted boiling water according to the packet instructions. Drain and rinse briefly under cold water to stop it cooking further.
- Meanwhile, season the chicken breasts and heat the oil in a frying pan over medium heat. Cook for 6-7 minutes per side until cooked through, then slice.
- In a large bowl, mix the mayonnaise, lemon juice, mustard, garlic, and half the parmesan to make the dressing. Season with salt and pepper.
- Add the pasta, lettuce, and sliced chicken to the bowl and toss to coat in the dressing.
- Serve topped with the remaining parmesan.
