Bubble & Squeak with Fried Egg
The classic way to use up leftover potato and cabbage — crisp on the outside, soft in the middle, topped with a fried egg.

Ingredients
- 700g potatoes, peeled and chopped
- 1/2 small green cabbage, shredded
- 25g butter, plus extra for frying
- 1 onion, finely chopped
- Salt and pepper, to taste
- 4 eggs
- 1 tbsp vegetable oil
Method
- Boil the potatoes in salted water for 15-18 minutes until tender, then drain and mash roughly (a few lumps are fine).
- Meanwhile, steam or boil the cabbage for 4-5 minutes until just tender, then drain well and set aside.
- Melt the butter in a large frying pan over medium heat. Add the onion and cook for 5 minutes until soft.
- Stir the mashed potato and cabbage into the pan with the onion, season well, and mix together.
- Press the mixture down flat in the pan and cook for 6-8 minutes without stirring, until a golden crust forms underneath, then flip in sections and crisp the other side for a further 5 minutes.
- In a separate pan, fry the eggs in the oil to your liking.
- Divide the bubble and squeak between plates and top each with a fried egg.
