Ingredients

  • 700g potatoes, peeled and chopped
  • 1/2 small green cabbage, shredded
  • 25g butter, plus extra for frying
  • 1 onion, finely chopped
  • Salt and pepper, to taste
  • 4 eggs
  • 1 tbsp vegetable oil

Method

  1. Boil the potatoes in salted water for 15-18 minutes until tender, then drain and mash roughly (a few lumps are fine).
  2. Meanwhile, steam or boil the cabbage for 4-5 minutes until just tender, then drain well and set aside.
  3. Melt the butter in a large frying pan over medium heat. Add the onion and cook for 5 minutes until soft.
  4. Stir the mashed potato and cabbage into the pan with the onion, season well, and mix together.
  5. Press the mixture down flat in the pan and cook for 6-8 minutes without stirring, until a golden crust forms underneath, then flip in sections and crisp the other side for a further 5 minutes.
  6. In a separate pan, fry the eggs in the oil to your liking.
  7. Divide the bubble and squeak between plates and top each with a fried egg.
