Beef Stroganoff with Rice

Ingredients
- 400g beef frying steak, thinly sliced
- 1 tbsp plain flour
- 2 tbsp olive oil
- 1 onion, sliced
- 250g mushrooms, sliced
- 2 tsp paprika
- 200ml beef stock
- 150ml soured cream
- 300g rice, to serve
- Salt and pepper, to taste
Method
- Cook the rice according to the packet instructions.
- Toss the beef strips in the flour. Heat 1 tbsp of the oil in a large frying pan over high heat and quickly brown the beef for 2 minutes. Remove and set aside.
- Add the remaining oil to the pan with the onion and mushrooms and cook for 6-7 minutes until softened and golden.
- Stir in the paprika and cook for 30 seconds, then pour in the stock and simmer for 3-4 minutes.
- Return the beef to the pan along with the soured cream and warm through for 2 minutes, without boiling. Season with salt and pepper.
- Serve over the rice.
