Ingredients

  • 400g beef frying steak, thinly sliced
  • 1 tbsp plain flour
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 250g mushrooms, sliced
  • 2 tsp paprika
  • 200ml beef stock
  • 150ml soured cream
  • 300g rice, to serve
  • Salt and pepper, to taste

Method

  1. Cook the rice according to the packet instructions.
  2. Toss the beef strips in the flour. Heat 1 tbsp of the oil in a large frying pan over high heat and quickly brown the beef for 2 minutes. Remove and set aside.
  3. Add the remaining oil to the pan with the onion and mushrooms and cook for 6-7 minutes until softened and golden.
  4. Stir in the paprika and cook for 30 seconds, then pour in the stock and simmer for 3-4 minutes.
  5. Return the beef to the pan along with the soured cream and warm through for 2 minutes, without boiling. Season with salt and pepper.
  6. Serve over the rice.
