Bacon & Cabbage Stir-Fry with Rice

A few rashers of bacon go a long way when stir-fried with a whole cabbage — a genuinely cheap way to feed four.

Ingredients

  • 300g rice (uncooked weight)
  • 4 rashers smoked bacon, chopped
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 1/2 green cabbage, shredded
  • 2 cloves garlic, crushed
  • 2 tbsp soy sauce
  • Salt and pepper, to taste

Method

  1. Cook the rice according to the packet instructions, then drain and set aside.
  2. Heat the oil in a large frying pan or wok over medium-high heat. Add the bacon and cook for 4-5 minutes until starting to crisp.
  3. Add the onion and cook for 3-4 minutes until softened.
  4. Add the cabbage and garlic and stir-fry for 5-6 minutes until the cabbage has wilted and is tender but still has some bite.
  5. Stir in the cooked rice and soy sauce and toss everything together for 2-3 minutes until well combined and heated through.
  6. Season with salt and pepper before serving.
