Bacon & Cabbage Stir-Fry with Rice
A few rashers of bacon go a long way when stir-fried with a whole cabbage — a genuinely cheap way to feed four.

Ingredients
- 300g rice (uncooked weight)
- 4 rashers smoked bacon, chopped
- 1 tbsp vegetable oil
- 1 onion, sliced
- 1/2 green cabbage, shredded
- 2 cloves garlic, crushed
- 2 tbsp soy sauce
- Salt and pepper, to taste
Method
- Cook the rice according to the packet instructions, then drain and set aside.
- Heat the oil in a large frying pan or wok over medium-high heat. Add the bacon and cook for 4-5 minutes until starting to crisp.
- Add the onion and cook for 3-4 minutes until softened.
- Add the cabbage and garlic and stir-fry for 5-6 minutes until the cabbage has wilted and is tender but still has some bite.
- Stir in the cooked rice and soy sauce and toss everything together for 2-3 minutes until well combined and heated through.
- Season with salt and pepper before serving.
